Perfectly creamy TIRAMISU

Hello my friends!

Hope you are all doing well. Today I have officially entered 39th week of pregnancy and I feel great! Super excited to meet our baby girl soon!

These days I have some extra energy so yesterday I used it to make yummy and super easy to make tiramisu. Credit for the recipe goes to my dear friend who shared the original Italian recipe with me.

3 eggs
3 tbsp sugar
250g Mascarpone cheese
One pack of lady fingers
Coffee without sugar
(not espresso or instant any other will work, I have used French press)

Separate egg yolks from the albumen.
Add the sugar to the yolks and mix it with a mixer until is nicely combined. Add mascarpone to this mixture (one spoon at the time)

Mix the albumen to make the snow (firm mixture). When it is done combine it gently with the wooden spoon into the other mixture.

The cream for TIRAMISU is now ready!

Soak the lady fingers in the coffee (few seconds on each sides), then line them into a baking dish *I have used the glass one* Continue with a layer of cream, then soaked biscuits until you have space. Finish with the cream and leave to rest in the fridge for at least 5hours.

I think the best result is when you leave it overnight. 🙂 Sprinkle with some cocoa and ENJOY!

Try it out and let me know your thoughts!
